Triple Cheese and Ham Summer Pie
An easy light summer pie with crispy filo pastry, no fuss just a luxurious simple summer supper with Black Mountains Preserves Mediterranean Relish
Preparation time: 15 minutes
Cooking time: 50-60 minutes
Serves: 4-6
Ingredients
1 x Packet Filo Pastry
Rapeseed Oil / Olive – we used fellow Artisan producers, Pembrokeshire Gold
6 – Beaten Eggs
2 x cups of Milk
Salt & Pepper to season
3 x tsps Oregano
2 cups of diced Ham – we used mustard & honey baked gammon pieces
2 or 3 large Spring Onions – chopped including the green leaf
3 cups of grated, crumbled trio of mixed cheeses – we used a mix of Cheddar, creamy Goats Cheese and Feta
To serve: Black Mountains Mediterranean Relish, Salad and boiled new Potatoes
Method
Whisk 6 eggs, season with salt and pepper and add the milk
Add the gammon
Add your trio of mixed cheeses – we used a mix of Cheddar, creamy Goats Cheese and Feta
Add Spring onions, oregano and combine well
Oil the deep base baking tin
Line with one sheet of Filo Pastry
Add 3 Filo sheets to create a crumpled layer – neatness isn’t really necessary
Drizzle with oil
Spoon in approximately half of the egg filling
Create a further crumpled layer with filo pastry
Add the remaining cheese, ham, spring onion and egg mix
Add the remaining filo pastry
Drizzle and brush with oil
Try to finish with a fairly flat layer

At this stage, cut through the pie into slices – we created approx. 12 generous pieces. This will help with portioning after cooking.
Bake at 200.C for approximately 50 minutes, until golden brown and firm to the touch, cook for slightly longer if needed.
Leave to stand for approx 15 to firm slightly
It will keep warm for serving
· To serve: Prepare a simple summer seasonal salad, and a generous spoonful of our Mediterranean Relish – bursting with the taste of Summer. Not forgetting some of BMP HQ’s homegrown new potatoes too!
