Simple Coronation Chicken

Quick & Easy Coronation Chicken

An easy and cheats way using our Indian Apple Chutney to make Coronation Chicken, perfect for topping a Jacket Potato.

Preparation time: 15 minutes

Serves: 2

Ingredients

  • 2 x Prepared & Cooked Jacket Potatoes

  • 250-400g Cooked Diced Boneless Chicken

  • 1 x Jar of Black Mountains Preserves Indian Apple Chutney

  • 1 x Stick of Celery finely diced

  • 1/2 x finely diced Red Onion

  • 2 tablespoons of Mayonnaise or Creme Fraiche or Greek Yoghurt

  • Salad Garnish

  • Salt & Pepper to season

Method

  1. Put the cooked chicken, 2-3 tablespoons of diced red onion, diced celery and mayo together in a bowl.

  2. Add 2 x tablespoons of Black Mountains Preserves Indian Apple Chutney

  3. Mix together and season with Salt & Pepper

  4. Serve on top of your jacket potatoes and garnish with extra red onion and celery for extra crunch and if you want extra spice add a few slices of a fresh red chilli or more Black Mountains Preserves Indian Apple Chutney.

  5. Simple, quick and easy and supper on the table in 15 minutes - plenty of time to microwave the jacket potatoes!
