Quick & Easy Coronation Chicken
An easy and cheats way using our Indian Apple Chutney to make Coronation Chicken, perfect for topping a Jacket Potato.

Ingredients
2 x Prepared & Cooked Jacket Potatoes
250-400g Cooked Diced Boneless Chicken
1 x Jar of Black Mountains Preserves Indian Apple Chutney
1 x Stick of Celery finely diced
1/2 x finely diced Red Onion
2 tablespoons of Mayonnaise or Creme Fraiche or Greek Yoghurt
Salad Garnish
Salt & Pepper to season
Method
Put the cooked chicken, 2-3 tablespoons of diced red onion, diced celery and mayo together in a bowl.
Add 2 x tablespoons of Black Mountains Preserves Indian Apple Chutney
Mix together and season with Salt & Pepper
Serve on top of your jacket potatoes and garnish with extra red onion and celery for extra crunch and if you want extra spice add a few slices of a fresh red chilli or more Black Mountains Preserves Indian Apple Chutney.
Simple, quick and easy and supper on the table in 15 minutes - plenty of time to microwave the jacket potatoes!
