Fluffy Pancakes with Pineapple & Welsh Whisky Marmalade

FLUFFY PANCAKES, also known as American style pancakes. Definitely the luxury version with a little added sugar and a superb luxurious fruity topping of Fresh Pineapple with Black Mountains Preserves St. Clements Welsh Whisky Marmalade - WOW!

Preparation time: 15 minutes

Cooking time: 20 minutes

Makes approximately 20 fluffy pancakes

Ingredients

2 x Eggs

90g Caster Sugar

1 x teaspoon Vanilla Paste

60ml Vegetable Oil

Pinch of Table Salt

1 x tablespoon Baking Powder

1 x cup Plain Flour

1 x cup Milk ( you choose Full Fat, Semi or Skimmed)

Pineapple Topping

A Fresh or tinned pineapple

2 x tablespoons butter

2 x tablespoons demerara sugar

4 x tablespoons of Black Mountains Preserves Welsh Whisky Marmalade


Method

1. Beat the eggs and sugar together till light and fluffy and the mixture is paler in colour.

2. Add the vanilla paste, oil & salt and beat together

3. Add the Flour and Milk, beat till smooth.

4. Lightly fold in the baking powder.

5. Heat a non-stick frying pan on a medium heat

6. Using a ladle or ice-cream scoop pour three amounts onto the hot pan

7. Air bubbles will begin to appear when quite a few you can turn over ( approx 3-4 mins)

8. The first couple of pancakes may not be the best don’t worry, the pan is just seasoning and coming up to temperature. Just go again and you will be delighted with the result.

9. Keep your pancakes warm prior to serving but they are best eaten fresh from the pan. Perfect with your favourite topping of Black Mountains Preserves jam, lemon & sugar or our luxurious Pineapple and Welsh Whisky Marmalade hot topping! It is a real WOW.

10. For the Pineapple topping heat the butter and sugar till melted, add the pineapple chunks and Black Mountains Preserves Welsh Whisky Marmalade. Heat through and serve on top of your fluffy pancakes. You might even want to enjoy a snifter of your favourite Welsh Penderyn Whisky too!
