Zingy Cranberry and Orange Relish

Cranberry and Orange Relish with added Zing! Sharp but sweet and tangy our handmade Cranberry & Orange Relish is the perfect accompaniment for your Christmas Dinner, the Boxing Day Sandwich or an easy relish to make all year round. It is so tasty on a classic Bacon, Brie and Cranberry Sandwich. We just love the addition of larger zest strands, and the freshly squeezed Orange juice giving you another zesty flavour layer. Richness is provided with the extra addition of Port but this is optional and can easily be replaced with more Orange or Apple juice if preferred.

Preparation time: 10 minutes

Cooking time: 20-30 minutes

Serves: 3-4 1x lb jars.

Ingredients

  • 600g Fresh Cranberries

  • 1 or 2 x large Sweet Orange (zest strands and juice)

  • 2 x Red Onion - diced

  • 150g Honey

  • 3 x Tablespoons of Port (optional replace with orange juice)

  • ! x Tablespoon Butter

  • 1 x Tablespoon of Olive Oil

  • 2 x Tablespoons of Balsamic Vinegar

  • Salt & Pepper

Method

  1. Gently melt the butter and olive oil together and add the finely diced red onion

  2. Cook on a low heat till onion is soft without too much colour

  3. Add Cranberries and Balsamic Vinegar, stirring occasionally to make sure nothing sticks to the bottom of the pan.The Cranberries will start to pop and soften as they cook

  4. Add the Honey, Port and/or Orange Juice to taste. We prefer our relish to be a little tart and zingy.

  5. Season with Salt & Pepper

  6. Add 2/3rds of strands of Orange Zest

  7. Continue to cook until the Cranberries are as chunky or smooth as you prefer

  8. Sterilise and warm your Jars. Fill with relish and garnish the top of each jar with a sprinkle of remaining Orange Zest Strands.

  9. Alternatively, allow a portion to cool in a presentation bowl and garnish with the remaining Orange Zest Strands.

  10. Enjoy with your Christmas Dinner or keep in the fridge and use to make the perfect Boxing Day Sandwich!
