BMP’s Coronation Quiche

Celebrate in style with Black Mountains Preserves Coronation Quiche

Whether you are entertaining family and friends at home or hoping to enjoy dining alfresco or a picnic in the park. Black Mountains Preserves version of the Royal Coronation Quiche is a big family hit!

Preparation time: 30 minutes

Oven cooking time: 20 mins for blind baking the pastry case

Oven cooking time: 30 mins for cooking the quiche

Makes: 6-8 supper size portions or 12-14 smaller picnic size slices

Ingredients

Pastry Case

  • 100g Trex

  • 200g Plain Flour

  • pinch salt

  • 1-2 eggs (depending on size) to bind

  • or a block of ready made shortcrust pastry

Filling

  • 125ml milk

  • 150ml creme fraiche

  • 4 x medium eggs

  • salt & pepper to season

  • 100g grated cheddar cheese

  • 100g grated double gloucester cheese

  • 300g diced and cooked sweet potato

  • 300g sliced and cooked leek

  • fresh thyme sprigs

Method

  • To make the pastry, sieve the flour and salt into a bowl add the trex and rub the mixture together gently, to make breadcrumbs.

  • Add the egg mix a little at a time till the dough comes together.

  • Cover and allow to cool in the fridge for approx 30mins

  • Pre-heat the oven to 180.C

  • Grease the baking dish / quiche flan dish with butter

  • Roll out the pastry and place into the baking dish. Shape and trim if needed. Line the case with greaseproof paper and baking beans or raw rice. Bake blind for 20 minutes

  • Reduce the oven temp to 160.C

  • Mix together the eggs, creme fraiche and milk, season with salt & pepper.

  • Cover the bottom of the pre-cooked quiche case with half of the cheddar, add the filling of leeks and sweet potato. (We cooked ours in the slow cooker the evening before overnight on a low setting with a few sprigs of thyme and a knob of butter)

  • Pour over the egg mix and top with the remaining cheeses for a golden crust.

  • Bake in the pre-heated oven for 25-30 minutes or until the filling is set and golden in colour

  • If you can wait, allow the quiche to cool a little before slicing.

  • Serve with your choice of sides. We decided upon creamy garlic mushrooms, saute new potatoes and a generous accompaniment of Black Mountains Preserves Tomato & Red Pepper Chutney - perfect!
